Tate & Lyle has a long history as a manufacturer of cane sugar and syrup, produced from sugar cane.

Around 70% of the world's production is extracted from sugarcane, which is a plant that grows in the southern hemisphere. The plant has a lifespan of about 7 years, growing all year round and can be harvested after about 18 months. This is in contrast to sugar beet, which is an annual plant that is planted in the spring and harvested in the fall.

All the golden and dark sugars have a lot of flavor, the darker the color, the stronger the flavor. The dark sugars and syrups contribute, among other things, body, complexity, and color, in addition to sweetness in food and drinks. The soft, moist sugars and syrups help make baked goods juicy and durable. Due to the amino acid structure of cane sugar, products made with cane sugar get even caramelization and browning when frying or heat-treated.

Tate & Lyle Light Brown, Soft Sugar

A soft, golden brown cane sugar with fine, small, easily soluble crystals. A small amount of molasses is added to achieve the light brown, soft sugar.

The taste is round and caramel-like, with a soft texture and juiciness from the molasses.

Light brown, soft cane sugar can be used in yeast-baked goods, cookies and pastries, caramels, breakfast cereals, desserts, sauces, Irish Coffee and as a topping.

Tate & Lyle Dark Brown, Soft Sugar

A soft, dark brown cane sugar with fine, small, easily soluble crystals. A larger amount of molasses is added to achieve the soft, dark brown sugar.

The flavor is rich, dark and reminiscent of caramel, chocolate and spices. The texture is soft and juicy.

Dark brown, soft cane sugar can be used in brownies, gingerbread, caramels and dried fruit cakes, in Irish Coffee or as a topping on pancakes. Experiment with marinades, barbecue sauces, spice mixes with soy, or for slow-roasted meat.

Tate & Lyle Demerara Sugar

A light brown medium-coarse cane sugar with large, golden crystals.

The taste is fruity and sweet with a distinct character.

Demerara is great in homemade granola, as a topping on yeast-baked bread, muffins or cakes. The coarse crystals add crunch to cookies, cakes, cinnamon rolls and desserts. It is also great as a topping in cocktails and coffee due to its characteristic taste and texture.

Lyle's Golden Syrup ®

A golden-colored syrup consisting of a mixture of sucrose, glucose and fructose that is naturally found in cane sugar. The taste is rich, sweet and reminiscent of honey.

The golden syrup of cane sugar lowers the freezing point of cakes and ice cream and prevents crystallization. It is well suited for soft biscuits, ice cream, granola or granola bars, cakes and variations of panna cotta and caramel pudding.

Lyle's white, light and dark syrup

The white, light and dark syrups are easy to dissolve in doughs, sauces and liquids. White syrup is suitable where a sweet taste without other complexity is desired, for example in custard, yoghurt, light pastries or sauces and mixtures with fruit and berries.

Light and dark syrups are suitable for foods where more complexity and flavor of toffee, toffee or darker tones of roasted corn, chocolate, coffee and caramel are desired. The dark syrups are very well suited in sauces, marinades, barbecue sauces, exotic mixtures or in spicy compositions with or without dried fruit.

Lyle's treacle and molasses

Treacle and molasses are very dark, almost black syrups. They are chewy and viscous with a rich, full-bodied flavor. They provide a taste experience of licorice, roots, spices, anise, burnt caramel, chocolate and coffee. The flavor is intense and gives a distinctive character to the finished product.

The syrups can be used alone or in combination with other types of sugar. Try them in liqueurs, spirits, marinades, soy sauces, as a glaze for pork or beef, as a marinade or as dessert toppings.
